Nutty sesame pairs with bright ginger in this Asian-inspired salmon recipe served with Cauliflower Mash. Leftovers of this great weekday meal can be reheated easily for lunch the next day. If you want to enjoy these “mashed potatoes” with another meal, double the amount of ingredients and save half for later-they freeze well.

Ingredients

  • 4 Salmon Filets ( 160g), skin on and bones removed

  • 1/2 cup Coconut Aminos

  • 1/4 cup Sesame Seeds, white or black

  • 1 tbsp Sesame Oil

  • 1 tbsp Spicy Mustard

  • 2 tsp Fresh Ginger, grated

  • 1/2 tsp Stevia Powder (optional)

  • 3 cups Cauliflower Florets, Steamed

  • 1/2 cup full fat coconut milk

  • 1 1/2 tbsp olive oil

  • 1 1/2 tsp Sea Salt, ground

  • Chives, chopped (for topping)

  • Additional Butter or Ghee (for topping)

Directions

  • Preheat the oven to 450 degrees F. Prepare a sheet pan with parchment liner.
  • Wisk together coconut aminos, sesame seeds, sesame oil, spicy mustard, grated ginger, stevia powder (optional) in a shallow bowl. Marinate the salmon in the dish (covered) for 30 minutes.
  • Place marinated salmon skin side down on parchment paper and bake until salmon is cooked through, about 12-15 minutes.
  • Once Salmon is nearly done baking place steamed cauliflower, olive oil, sea salt in a food processer and whip until it reaches puree consistency. top with additional butter as needed for serving.
  • Serve Cauliflower Mash and fish next to one another, topped with chopped chives as desired.
